Chicken Cacciatore with Roasted Peppers

This chicken dish is a fantastic option for family style meals, for pot luck dinner and also great for buffet style meals. It reheats very well and it would be fantastic to freeze and share with a new mom or with someone recovering from surgery. Basically, it’s a great dish under any circumstance!

Chicken Cacciatore with Roasted Peppers

Chicken Cacciatore with Roasted Peppers

Makes 8 entree size portions

Ingredients

4 large-ish chicken breasts (7 ounces or more each)
2 tablespoons olive oil
1 onion, coarsely chopped
2 tablespoons chopped garlic
1 cup good red wine
1 jar Trader Joe Roasted Peppers (2 large roasted peppers), drained and coarsely chopped
1 14ounce can fire roasted diced tomatoes with juice
1 cup chicken broth (or 1 cup water)
1 cup water
3 tablespoons drained capers
1 tablespoon dried oregano leaves
Kosher Salt
Freshly Ground Pepper

Directions

1. Generously sprinkle chicken breasts with kosher salt and freshly ground pepper.
2. In a large heavy bottomed pot, on medium-high heat, add olive oil. Add chicken breast to the pot and let brown, about 5 minutes per side. Flip over and let brown for another 5 minutes.
3. Remove chicken from pot and set aside. When the chicken cools, cut into slightly larger than bite size chunks.
4. Add onion to the pot with 1/2 cup of water. Saute until onions are translucent, about 5 minutes.
5. Add garlic and warm through, about 30 seconds.
6. Add wine and saute onions and garlic for about 7-8 minutes, until the wine is reduced by about half.
7. Add the tomatoes, roasted peppers, chicken broth, capers, oregano and chicken pieces to the pot. Make sure that they are mostly covered with the sauce. If not, add a little bit more water.
8. Bring to a simmer. Turn heat down to medium/low and let simmer for about 30 minutes.
9. Taste sauce and adjust for salt and pepper.
10. Serve over pasta, quinoa or alone! Enjoy!
