Quinoa Salad with Tahini Dressing

My favorite part about having a falafel sandwich is the tahini dressing. My dreams are filled with deep fried falafel, that’s perfectly crispy on the outside and light and fluffy on the inside. This isn’t something that I make at home. I’m worried that if I start deep frying, I might never stop! (seriously) But a great tahini dressing, mixed with salad greens or quinoa is a great way to curb my falafel cravings until the next time I can get myself to Taim or Mamouns. 🙂

Quinoa Salad with Tahini Dressing

This dressing goes well with most any salad combination. I usually pair it with chick peas and chopped romaine. I especially love it with quinoa because the nuttiness of the quinoa shines through. Throw in some tomatoes and cucumbers and it’s a hearty lunch meal… vegan and hearty! And for pot lucks… perfect! Tastes best at room temperature.

Quinoa with Tomatoes, Cucumbers, Red Onions & Tahini Dressing

Quinoa Salad with Tahini Dressing

Serves 4-6 as a side


1 cup quinoa*
2 cups water (or chicken/vegetable broth)
1 teaspoon olive oil
1/2 English cucumber, diced
1 pint grape tomatoes, quartered
1/2 red onion, finely diced
4 tablespoons tahini
6 tablespoons water
2 tablespoons freshly squeezed lemon juice
1 teaspoon garlic powder
Kosher Salt
Freshly ground pepper


1. In a small pot, on medium/high heat, heat olive oil for 1 minute.
2. Toss in quinoa and stir to coat. Stirring often, toast the quinoa for 3-4 minutes. It should smell wonderfully fragrant and nutty.
3. Add water to pot. Bring to a boil and then turn heat down to a simmer. Cover and let simmer for 18 minutes.
4. Uncover, fluff with a fork and let cool for at least 15 minutes.
5. In a large bowl, combine cooled quinoa, diced cucumber, quartered grape tomatoes and red onion.
6. Combine tahini, water, lemon juice and garlic powder. Wisk well. It will take a few minutes for the tahini to blend until smooth and creamy. Add kosher salt to taste.
7. Toss salad ingredients with dressing. Taste and adjust for kosher salt and pepper.
*You can make the quinoa ahead of time and then combine with salad ingredients!
